Soya and Mushroom Biryani: Protein-Rich Vegetarian Recipe for a Healthy Meal

For those looking for a vegetarian meal that combines indulgent flavours with a nutritious profile, fitness influencer Vanshika Khurana has shared a recipe for soya and mushroom biryani. The dish uses protein-rich soya chunks, mushrooms and brown basmati rice, making it a filling option for people seeking a balanced meal. The recipe is designed to provide a combination of protein and fibre while keeping the preparation relatively light.

The main ingredients include soya chunks, mushrooms, brown basmati rice and Skyr, along with mint, coriander, biryani masala, kasuri methi, green chilli-garlic paste, lemon juice and a small amount of jaggery powder. The recipe also uses ghee, cinnamon, black pepper and saffron-infused toned milk to add flavour and aroma.

To prepare the dish, the soya chunks are first boiled and squeezed to remove excess water. Sliced onions are air-fried until crisp and later used as part of the biryani’s layers. The soya chunks and mushrooms are then combined with Skyr, herbs, spices and other seasonings for marination. Meanwhile, the brown basmati rice is partially cooked with cinnamon, black pepper, ghee and salt.

The biryani is assembled by layering the marinated soya and mushroom mixture with the partially cooked rice. Fried onions and fresh mint are added between the layers, while saffron-infused milk is poured over the rice to enhance the colour and flavour.

The dish is then cooked until the rice is completely done and the flavours have blended together. The combination of mushrooms and soya gives the biryani a substantial texture, while the herbs and spices provide the characteristic aroma associated with the dish. With brown rice, soya and mushrooms forming its base, the dish combines familiar biryani flavours with ingredients often associated with fitness-focused diets.
