Heritage Group To Honor 110-Year-Old German Bread-Famous Kolkata Bakery

German bread and Bakar Khani are still produced at the 110-year-old K Ali Bakery on Mominpur Road despite the obstacles posed by confectioneries made by machines.
On November 24, the Purono Kolkatar Golpo Society (PKGS) would honor it for World Heritage Week with a certificate of honor, a memento, a watch, and Rs 5,000.
Even now, the bread is still widely popular, and after 6.30 p.m. most days, it is no longer accessible. Every evening, they produce almost 20 pounds of bread, which sells out in under two hours. German bread differs from other bread in that the outside is tougher and the center is quite soft. In addition to flour, milk and butter are added to make it tastier than regular bread. It is a preferred evening snack in the area.
Bakarkhani is a type of flatbread that is another distinctive item. It is offered every morning, and demand is particularly high in the winter.
Rahman claimed that traditional bakeries are falling behind in the modern era of packaging and complexity. He is adamant about passing down the recipe and the knowledge that was taught to him by the previous generation.
When traditional bakeries and food items are quickly disappearing from the city, according to PKGS administrator Swarnali Chattopadhyay, it is important to acknowledge K Ali Bakery’s distinctive contribution to Kolkata’s culinary legacy. Jayanta Sen, a different PKGS administrator, said it is important to recognize the drive and tenacity required to uphold the tradition in the face of great adversity.
